Did they give you any indication of what level of quality they are looking for? If they don't have that much available to the students than they can't really expect that much from you unless they want each student to go out and buy their own hardware/software(which some places do).

You should also make sure to go to "Project->Project Settings->Keyframe and Rendering" and set your fields option to No Fields. If you don't set it to No Fields, jaggies could occur even if you deinterlace when going backward.

It's possible to convert a real video file into an AVI-codec based file but it's not recomended. Real video files are usually so full of artifacting that the second round of compression will make them virtually unwatchable.
