Getting back into editing finally; trying to maintain the best image quality I can manage this time around. MPEG Streamclip seems to do a good job encoding the VOBs and maintaining quality, however interlacing on it seems to result in pan shots getting a bit jerky, particularly vertical ones. Are there any better alternatives I can try for deinterlacing things in a smoother fashion?
Also, if anyone out there uses Final Cut, what do you use for your editing codec?

I know there are a lot of plugins out there for FCS/FCP that deal with deinterlacing, but I'm not sure which ones work better than others, so I can't help much there.
If you have the disc space, Apple ProRes seems to work really well for me in Final Cut, but the file size is enormous. Usually an uncompressed quicktime works just fine as well, though you can edit straight from the .VOBs, which is what I like to do.
